Imperial is the top of the first harvest — the smallest, youngest leaves, the ones a picker takes least of. Ground fine and slow so the powder never overheats, it whisks to a thick, glossy foam and finishes sweet rather than sharp. Against ceremonial the difference is small in a latte and obvious in a bowl of water.

How to make it

Give it water, not milk. Sift 2 g into a warm bowl, pour 70 ml at 75–80 °C, whisk for fifteen seconds and drink it while the foam is still there. For a thicker bowl use 4 g to 40 ml and stir rather than whisk — it comes out like green cream.

Two kinds of people: those who have drunk matcha long enough to want it plain, and cafes that want one tin on the menu clearly better than the rest. If this is your first tin, start with ceremonial and come back to this one.

Is imperial worth it over ceremonial?

If you drink it with water, yes — it is sweeter and rounder with a longer finish. If you drink lattes with syrup, save the money and buy ceremonial.

How much caffeine is in a cup?

A 2 g bowl carries roughly 60 mg, about the same as a single espresso, but it arrives more slowly because of the L-theanine in the leaf.
