What makes it ceremonial

Ceremonial grade comes from the first harvest of the year — the youngest leaves off the top of the plant, shaded for weeks before picking. Shade makes the plant build up the amino acid that tastes sweet and the chlorophyll that makes it green, and takes the edge off the bitterness. Stems and veins are stripped out before grinding, which is why the powder is this fine and this bright.

How to make it

Straight: sift 2 g into a warm bowl, add 70 ml of water at about 80 °C, whisk in a brisk W for fifteen seconds until a fine foam sits on top. As a latte: the same 2 g and 60 ml of water, then 150 ml of milk, hot or over ice. Never use boiling water — it scalds the leaf and turns a sweet tin bitter.

Ceremonial or imperial?

Ceremonial is the everyday drinking grade and the one we recommend starting with. Imperial is the same first harvest taken a step further — sweeter, rounder, with a longer finish — and it earns the difference if you drink it straight. In a latte with syrup most people cannot tell them apart, so the sensible order is ceremonial in milk, imperial in water.

Questions people ask

Can I drink ceremonial matcha without milk?

That is what it is for. Whisked with water alone it is sweet and smooth, with none of the grassy bitterness a cheaper grade shows once the milk is taken away.

How long does an open tin last?

Sealed, about a year. Opened, drink it inside two months — matcha does not spoil, but it loses its colour and its sweetness to air and light.

Keeping it

Keep the tin closed, cool and out of the light. Matcha fades in daylight and picks up smells in a fridge, so a cupboard beats a fridge door. Once opened it is at its best within two months.
